In a mixing bowl, crumble the fresh paneer. Add finely chopped red onion, green chillies, fresh coriander leaves, grated raw beetroot, salt, red chilli flakes, and dry-roasted carom seeds (ajwain).
💡 Tip: Dry-roast the ajwain on a hot pan for a few seconds before adding to release its aroma. Letting the grated beetroot sit with the paneer for 2 minutes makes the filling bleed beautiful pink.
Mix all the stuffing ingredients gently with your hands until well combined and the paneer turns completely pink.
Divide your kneaded whole wheat dough (atta) into two medium balls (peeda). Dust with dry flour, and flatten with your thumbs to form a cup or bowl shape with thinner edges.
Place 2-3 tablespoons of the pink stuffing in the center of the dough cup. Pleat the edges together to seal the stuffing inside, pinch off any excess dough, and press it flat.
Dust the stuffed ball lightly with dry flour and roll it out gently using a rolling pin (belan) into a circle of 6-7 inches. Roll evenly so the stuffing doesn't tear through.
Heat an iron griddle (tawa) on medium-high heat. Place the rolled paratha on the tawa and cook for 1 minute, then flip it. Cook the other side for another minute.
Apply 1/2 teaspoon of ghee on each side of the paratha. Flip and press gently with a spatula until golden-brown roasted spots appear on both sides. Serve hot.

A unique and healthy twist on the classic paneer paratha. Crumbled fresh paneer is mixed with a touch of raw grated beetroot, turning the stuffing pink and adding a sweet earthy hint. Roasted on a hot iron tawa and lightly brushed with just 1/2 teaspoon of ghee per paratha, it is protein-packed and low-fat.
