This is a very healthy and traditional way to use leftover rice. Soaking it overnight in an earthen pot creates plenty of probiotics, which are very good for digestion. A light tempering of mustard seeds and curry leaves on top, along with fresh onions and green chilies, makes it the best and coolest meal of the summer.
In very hot summer weather, 12 hours is usually perfect. Fermenting for too long can make the rice excessively sour. If your kitchen is very warm, you can transfer it to the refrigerator after 10-12 hours of fermentation.
Adding a small amount of milk helps buffer the acidity during overnight fermentation, keeping the rice pleasantly sweet and creamy rather than turning too sour.
While you can ferment the rice in glass or stainless steel, clay pots are highly recommended. Clay is porous, which helps regulate temperature and aeration, producing superior fermentation and a cooler taste.
This recipe uses just ½ teaspoon of mustard oil for the tempering of mustard seeds and curry leaves. It falls in the green Low-Oil category, making it light and heart-healthy.
