Ingredients

For Fermentation

  • 2 cups leftover cooked white rice —

For Tempering

  • 8–10 fresh curry leaves —

To Finish

  • 1 small onion, finely chopped —
  • 2 green chillies, chopped —
  • ½ tsp salt, or to taste — नमक स्वादानुसार

Instructions

1

Take leftover cooked rice in a clay pot (earthen vessel). Add curd, milk, and water, mixing well. Cover and let it sit overnight (or for 12 hours) at room temperature to ferment.

💡 Tip: Clay pots keep the rice naturally cool and aid in perfect fermentation.

The next afternoon, once fermented, stir the mixture gently. Add salt, a pinch of red chilli powder, and mix well.

💡 Tip: Keep the onion and chillies chopped and ready to mix raw for crunch.

Step 2
3

Heat mustard oil in a small tempering pan. Add mustard seeds and let them splutter, then add curry leaves and turn off the heat.

💡 Tip: Mustard oil tadka adds a highly authentic, sharp aroma to this cooling dish.

Pour the hot tadka over the fermented rice mixture. Add the chopped raw onion and green chillies. Mix everything thoroughly and serve cool.

💡 Tip: Adding onion right at the end keeps it crisp and sweet.

Mom's Special Tip

About This Recipe

Frequently Asked Questions

Can I ferment the rice for longer than 12 hours?

In very hot summer weather, 12 hours is usually perfect. Fermenting for too long can make the rice excessively sour. If your kitchen is very warm, you can transfer it to the refrigerator after 10-12 hours of fermentation.

Why is milk added along with curd?

Adding a small amount of milk helps buffer the acidity during overnight fermentation, keeping the rice pleasantly sweet and creamy rather than turning too sour.

Is a clay pot absolutely necessary?

While you can ferment the rice in glass or stainless steel, clay pots are highly recommended. Clay is porous, which helps regulate temperature and aeration, producing superior fermentation and a cooler taste.

How much oil does this recipe use?

This recipe uses just ½ teaspoon of mustard oil for the tempering of mustard seeds and curry leaves. It falls in the green Low-Oil category, making it light and heart-healthy.
