Oil Usage
Take the day-old cooked rice and loosen it with a spoon so the grains separate cleanly. Set aside.
💡 Tip: Cold, day-old rice separates best — fresh hot rice turns mushy when mixed.
Boil the sweet corn kernels until just tender, then drain off the hot water.
💡 Tip: Drain the corn well so no extra water makes the rice soggy.
To the rice add the boiled corn, chopped onion, curry leaves, green chilli and salt. Mix gently — Maa mixes it by hand.
💡 Tip: Keep the onion raw and just-mixed so it stays crunchy and fresh.
Heat the desi ghee in a small pan. Add the mustard seeds and let them splutter, then add a pinch of hing. Pour this hot tadka over the rice and fold it through.
💡 Tip: Just one teaspoon of ghee is enough — this stays a genuinely low-oil dish.
Fold in the crushed beetroot at the very end for a soft pink tint, then serve. Add it last on purpose — beetroot added early dyes the rice too dark. Eat it as-is in summer; in winter, warm it briefly in the microwave.
💡 Tip: Beetroot last = a pretty blush, not a heavy red. A great way to use up last night's rice.

A quick, no-waste way to turn day-old cooked rice into a fresh, light meal. The rice is loosened grain-by-grain, tossed with boiled sweet corn, onion and curry leaves, finished with a tiny desi-ghee tadka of mustard seeds and hing, and given a soft pink blush with a little crushed beetroot folded in right at the end. Barely any oil — just one teaspoon of ghee for the whole pan.
Leftover, cooled rice works best because the grains stay separate; hot fresh rice turns sticky and clumps together. If you only have fresh rice, spread it on a plate and let it cool completely before mixing.

Beetroot stains rice dark very quickly. Folding a little crushed beetroot in right at the end gives a soft pink tint instead of turning the whole dish deep red.
